Chopped Salad Recipe

Chopped Salad Recipe - 10/29/13

Costco salad mix, chopped
romaine lettuce
 avocado
1/3 jicama
2 slices of bacon
1/2 onion
2 carrots
2 stalks of celery
handful of radishes, sliced thinly
apple
handful of dried cranberries
olive or avocado oil
TJ balsamic vinegar
coconut vinegar

2 servings (or half can be kept in frig overnight)

Daily diet:

Breakfast:  pork chop, roasted Honeycrisp applesauce, spinach and cabbage sauteed in bacon grease

Lunch:  chopped salad and leftover squash

Dinner:  roast chicken and vegetables (carrots, onions, turnip, parsnip, celery, yam, and leek)
